Les r\u00e9server au froid. <br>Au moment du service, les r\u00f4tir au beurre dans une po\u00eale en veillant \u00e0 ne pas les surcuire. Si vous disposez d&rsquo;une sonde de cuisson, la temp\u00e9rature au centre du filet doit \u00eatre de 55\u00b0C environ.&nbsp;<br>Laisser reposer sur une assiette 5 minutes, puis trancher en fines escalopes.&nbsp;<\/p>\n<p><strong>Fond de faisan :<\/strong> Concasser les cuisses et les carcasses , les placer dans une casserole, ajouter le fond ou le bouillon de volaille et porter doucement \u00e0 \u00e9bullition. Ecumer soigneusement, puis ajouter la garniture de marmite (oignons, poireaux, c\u00e9leri, carottes, coup\u00e9s en morceaux pas trop gros)&nbsp; Cuire 1.5 heures environ puis passer au chinois et conserver le jus.&nbsp;<\/p>\n<p><strong>Potage&nbsp;:<\/strong> Suer les poireaux taill\u00e9s en morceaux. Ajouter les ch\u00e2taignes, le fond de faisan et les c\u00e8pes secs et laisser fr\u00e9mir 15 minutes environ. Ajouter la cr\u00e8me. Laisser fr\u00e9mir 5 minutes suppl\u00e9mentaires. Mixer finement au mixer et passer au chinois. Rectifier la consistance et l\u2019assaisonnement s\u2019il y a lieu. R\u00e9server.<\/p>\n<p><strong>Duxelles de champignons :<\/strong> Hacher les \u00e9chalottes et les faire fondre dans un peu de beurre, sans coloration. Ajouter les champignons hach\u00e9s finement et laisser cuire jusqu&rsquo;\u00e0 \u00e9vaporation totale de l&rsquo;eau des champignons. Ajouter le vin, blanc et laisser \u00e0 nouveau cuire jusqu&rsquo;\u00e0 \u00e9vaporation totale du liquide. Retirer du feu et assaisonner de sel, poivre et si on le souhaite, d&rsquo;une pointe d&rsquo;ail hach\u00e9.&nbsp;<\/p>\n<p><strong>Ravioles&nbsp;:<\/strong> Etaler une p\u00e2te \u00e0 raviole devant soi. Badigeonner l\u00e9g\u00e8rement avec un peu d&rsquo;eau \u00e0 l&rsquo;aide d&rsquo;un pinceau de cuisine. Poser au centre une petite cuill\u00e8re de duxelles, rabattre la p\u00e2te sur elle-m\u00eame pour emprisonner la farce, bien souder les bords et retailler en demi-lune avec un emporte pi\u00e8ce.&nbsp; R\u00e9server au froid.&nbsp;<br>Au moment du service, pocher 2-3 minutes \u00e0 l\u2019eau bouillante sal\u00e9e.<\/p>\n<p><strong>Dressage&nbsp;:<\/strong> En bol, disposer des tranches de faisan et quelques ravioles. Verser le potage par-dessus et d\u00e9corer avec une pluche de cerfeuil.<\/p>\n<p><strong>REMARQUES :<\/strong><\/p>\n<ul>\n<li>Pour une entr\u00e9e, 1 faisan suffit pour 6 couverts. En plat, comptez-en deux, vois trois pour les gros mangeurs.<\/li>\n<li>Pour simplifier la recette, vous pouvez vous passer de confectionner les ravioles. Ce sera un peu moins festif , mais tout aussi d\u00e9licieux.&nbsp;<\/li>\n<li>Les cuisses du faisan sont souvent tr\u00e8s coriaces car remplies de tendons tr\u00e8s durs, raison pour laquelle on pr\u00e9f\u00e8re les utiliser pour la r\u00e9alisation du fond plut\u00f4t que de les manger.&nbsp;<\/li>\n<li>Le filet (poitrine) de faisan est parfois un peu sec. On peu le rendre&nbsp; plus moelleux en le trempant 20-30 minutes dans une saumure \u00e0 10% (1 litre d&rsquo;eau, 100 g de sel, chauffer pour fondre le sel et refroidir avant utilisation) au frigo. le rincer ensuite \u00e0 l&rsquo;eau courante et le s\u00e9cher.
